Beer Can Chicken

  • ŸIngredients: One four-pound whole chicken; 2 tbsp. vegetable oil; 2 tbsp. salt; 1 tsp. black pepper; your favorite dry rub for chicken; 1 can of beer.

  • ŸTime: One hour and 35 minutes.

  • ŸDirections: Clean the chicken well, then use the spices and dry rub to cover the chicken. Set it aside. Open the beer and have a drink or two, which makes the can be half-full. Put the bird over the can by inserting the can into the body cavity. Start up the grill, and when it is ready, put the chicken on the grate. You should make the beer can be standing up and the chicken legs form a tripod that will keep it upright. Cook over indirect medium heat until the temperature registers 165 degrees in the breast area.

Garlic-Lemon Beer Can Chicken

  • Ingredients: 1 whole chicken, about 4 pounds; 1 can of beer; 1 lemon, cut in half; one garlic head, cut in half; 1 tbsp. olive oil

    Ingredients for rub: sweet paprika, sea salt, ground coriander and ground cumin, 2 tsps. each; freshly ground pepper and ground ginger, 1tsp. each.

  • Time: 140 minutes

  • Directions: Prepare the chicken and rub the lemon and garlic all over it. Then rub thoroughly with olive oil. Blend the rub ingredients well and place the rub all over the chicken, and remember to have some left over. Open up the beer and take a few drinks, then put the rest of the rub into the can. Set the chicken on top of the beer can and fit the can into the body cavity. Roast the chicken over medium heat until the temp reaches 180 degrees. Let stand 10 minutes before serving.

Beer Butt Chicken

  • Ingredients: 1 cup butter; 1 whole chicken, about four pounds; 1 can of beer; paprika and garlic salt, 2 tbsp. each; salt and pepper to taste.

  • Time: 3 hours

  • Directions: Heat the grill to low temperature. Melt half the butter and mix in 1 tbsp. each of paprika and garlic salt. Drink half the beer, and add the rest of the ingredients to the can. Put the chicken on the beer can and brush the chicken with the melted butter mixture. Roast for three hours, basting occasionally with any remaining butter mixture.

Southwestern-Style Beer Can Chicken

  • Ingredients: One 4-pound chicken, one can of beer

    Ingredients for rub: garlic powder, ground cumin, salt and sugar, 1 tsp. each; 1 tbsp. chili powder; ¾ tsp. black pepper and ¼ tsp. allspice.

  • Time: 140 minutes

  • Directions: Clean the chicken out well, then use the rub to cover it completely. Pour the rest of the rub into the beer can, but remember to have a few drinks from it first! Puncture extra holes in the top of the beer can. Put the chicken on the can, and stand your chicken tripod on the grill. Grill over indirect medium heat for two hours.

Memphis Style Beer Can Chicken

  • Ingredients: One four-pound chicken, one can of beer.

    Ingredients for rub: 1 tbsp. brown sugar; 1 tsp. paprika; ½ tsp. salt; ½ tsp. cayenne pepper; dry mustard, freshly ground pepper and garlic powder, ¼ tsp. each.

  • Time: 105 minutes

  • Directions: Clean out the chicken and set it aside. Mix together the rub ingredients and use the rub all over the chicken. Open the beer and take a few drinks until it is half-full, then pour the remaining rub into the can. Prop the chicken over the can by inserting the can into the body cavity. Roast over indirect grill heat until the temperature of the thigh is 180 degrees.
